I love a light dish. I like simple flavors and fresh ingredients. I am now on a TV show called Cannabis Planet. I like to ingest my medicine more than smoking since I have a hernia and my back is always cramping I think just too many hard years in the kitchen. I only can show you how I like to cook for myself and patients close to me. I am in Sothern Ca. I will be filming and educating people on the merits of the cannabis plant. I hope you like my recipes; I will let you where I'll be with the cameras. I am giving you this first simple pasta recipe since it is my mother’s favorite. My mother is a diabetic and has many illnesses. I have helped her lower her intake of pain pills with various dishes. This one is just her favorite!
Shrimp Cappelini serves one
4 Large deveined Shrimp/per person
¼ tomato diced and seeded/(this is optional, the seeds add water to the dish.)
1 clove garlic/ sliced length wise paper thin.
Sea Salt/ to taste
Fresh Pepper/ to taste
Fresh Basil Chiffanode*
Angel Hair Pasta/ 6oz cooked per person
Olive Oil/ enough to sauté all your ingredients
Medicated olive oil 1 T
In a hot pan, add the olive oil and coat the pan evenly. Place the shrimp in first and season with a pinch of salt and pepper. When the shrimp start to cook, add the garlic, and tomato. Now season again with the salt and pepper, and add the basil chiffanode*. Toss to combine. When the sauce has come together take it off the heat and add the medicated olive oil. While the sauce is resting you can cook the pasta according to the manufactures specifications. When the pasta is ready toss it hot back into the pan and coat it evenly with the sauce. Plate the dish in a large pasta bowl with more fresh basil as a garnish.
*Chiffonade is a cooking technique in which herbs or leafy green vegetables (such as spinach and basil) are cut into long, thin strips. This is generally accomplished by stacking leaves, rolling them tightly, and then cutting across the rolled leaves with a sharp knife, producing fine ribbons
