When I'm home, I always end up cooking. I guess it is just my way of relaxing. I'm sure alot of you think that is crazy! I'm sure that a hot grill and hours of man power sound like a job more than a good time to most of you. I was raised on large cook outs with the entire family. Everyone in the neighborhood, family or not, would come and enjoy. I have a recipe that will make any bbq sunday a medicated one! You can go to the show to see how to medicate your agave nectar.
2 slabs ribs (pork will do best)
Basic BBQ Rub*
2 Onions
2 whole garlic bulbs
3 Cups Soy sauce
2 Cups Chicken stock
3 T Curry Powder
1 can Coconut Mlik
1 Large Bottle your favorite BBQ sauce.
1 Can Chipolte peppers in adobo
1 T medicated Agave Nectar person
1/4 cup Agave nectar
So this recipe is going to take some time, but is there a good recipe for ribs that doesn't?
First heat the soy sauce, chicken stock, coconut milk, and curry. Peel one garlic bulb and add to the mixture. Quarter one of the onions and combine. Turn down the heat and let simmer. While this is happening, Season the ribs on both sides with your BBQ rub. Place into a roasting pan. I like to use the steamer attachment on my roasting pan. Place the hot liquid underneath the seasoned ribs and cover with foil. Place into a hot 400 degree oven for 2 hrs or until the bones start to pull away from the meat.
While the ribs are in the oven, dice the remaining garlic and onion and saute. When the onion and garlic are soft add some of the pureed chipolte peppers. When they are cooked down, maybe 1-2 mins, add the BBQ sauce. If your BBQ sauce is thick, save some chicken stock so you can thin it out. Let the sauce get hot, and add the Agave. Now here you can adjust the heat/sweet index of your sauce.
After the meat on the ribs is pulling away from the bones. Pull the ribs and let them rest for 30 mins. We want them to firm up. Once they are firm, re-season them with the rub. Place them on the grill. Grill them to your liking lathering them in the sauce during the last 5 mins of cooking. Serve with more medicated sauce. Enjoy!
