As the end of summer approaches, many of our young adults are headed back to the hallowed halls of their colleges and universities — and the rest of us prepare for a lot less outdoor time and a lot more of life’s demands. It’s not a bad thing, but there is something about summer that makes you feel like you have all the time in the world and you can take care of business tomorrow.
For those of us who indulge in foods prepared with cannabis, these three delectable dishes take very little time to prepare, and you can make this particular magic happen with a hot plate and a blender, two pieces of kitchen equipment that college kids seem to have on their “what to pack for college” lists. Like the secret menu at “Jamba Juice,” you can create your own smoothie magic with a terrific top-secret ingredient. Remember that if you are looking for pain relief, make a butter or oil with a cannabis strain that has a high CBD component.

Smoothies have become super popular, and wise and hungry college students like to whip up a healthy breakfast or liquid meal when they are on the run. And some soccer moms like them too! A good rule of thumb is to come up with a balance of fruit, liquid and whatever add-ins you like. For two smoothies I like to use approximately 2 cups of liquid, same with the fruit, a binder like nut butter or oatmeal, a sweetener and any oils and spices you desire. If you want to add ice, figure that a cup of crushed will give you a couple of thick smoothies.
-2 cups yogurt or almond milk
-1 large banana, sliced
-½ cup peanut or almond butter
-1-2 tablespoons canna-coconut oil
-4 tablespoons red raspberry jam
-1 tablespoon honey or agave, optional
Combine all the ingredients in a blender and puree until smooth. Easiest if you put the liquid in first. Feel free to add ice if you are so inclined. Ice will make it colder, frothier and thicker.
Divide the smoothie between two large glasses. Drink immediately.
We call it Tex-Mex comfort food, and a plate of Migas, (scrambled eggs with crisp tortillas) can really hit the spot, and takes just minutes to make. You can add chorizo or bacon, beans or vegetables; it’s pretty hard to go wrong. Some say it is the best hangover cure, I say it is one of the best and most delicious ways to get high.
-1-2 tablespoons cannabutter
-1-2 tablespoons regular butter
-½ small onion, chopped
-¼ cup red pepper, seeded and chopped
-4 large eggs, lightly beaten
-1 cup tortilla chips, broken
-½ cup cheddar cheese, shredded
-4-6 tablespoons salsa
Heat the cannabutter and regular butter in a large non-stick sauté pan. Sauté the onion and red pepper until soft, about 5-6 minutes. Stir in the eggs and begin to cook. Add the chips and continue to stir until the eggs have set.
Place the cheese on top of the eggs and top the cheese with the salsa. Divide between the plates and serve immediately.
Post Graduate Peanut Sauce
A peanut sauce is a magnificent thing. Whether you are tossing it with noodles or topping some chicken, it is a sauce that can be made a head and kept in the fridge, covered for 4-5 days. It even makes a great dip for veggies and chips. Good with pretzels!
-1 lb. spaghetti
-½ tablespoon table salt
-2-3 tablespoons canna-canola oil
-1 garlic clove, minced
-½ cup smooth peanut butter
-¼ cup shredded raw carrots
-¼ cup soy sauce
-2 tablespoons brown sugar
-1 tablespoon rice vinegar
-½ teaspoon crushed red pepper
-¼ cup hot water
-¼ cup chopped scallion
-¼ cup chopped peanuts
Bring a large pot of water to a boil. Add the salt. Cook the pasta according to the package directions. Drain and cool under running water.
In a large bowl combine the canna-oil, garlic, peanut butter, carrots, soy sauce, brown sugar, rice vinegar, red pepper and the hot water. Stir well until all the ingredients are blended thoroughly.
Toss the noodles with the sauce and divide between four plates. It’s especially tasty, and looks really nice, topped with the scallion and peanuts.
