How to Make a Sparkling Cannabis Cocktail

Mix a festive, easy-to-make cannabis cocktail for your next celebration!

Generally speaking, there’s nothing more festive than a crisp bottle of bubbly—until now, that is. Welcome to the world of the sparkling cannabis cocktail: a simple, adaptable drink for modern celebrating that can be tailored to your tastes. Start your own tradition with a homemade cannabis beverage. It’s easier than you think!

INGREDIENTS

11.5 ounces unsweetened frozen white-grape-juice concentrate (or another juice)

1 gram cannabis concentrate (sugar wax, budder, shatter or crumble)

½ teaspoon liquid sunflower lecithin 

11 cups sparkling water, tonic or club soda

Enough vegetable oil for an oil bath

DIRECTIONS

Thaw the frozen juice concentrate to room temperature (you can begin decarboxylating the concentrate, as described next, when the juice is about two-thirds thawed).

Decarboxylate the concentrate in an oil bath by placing a small, heat-resistant glass dish in the center of a saucepan. Pour enough vegetable oil into the saucepan to immerse the dish about two-thirds of the way to the top. Take care to leave enough room to be able to remove the glass dish when the oil is hot.

Warm the oil over medium-high heat to 275°F, using a candy thermometer to keep an eye on the temperature. Once the oil is hot enough, turn down the heat slightly to medium, and place the cannabis concentrate into the glass dish.

Heat the cannabis concentrate for about 15 minutes, adjusting the heat as needed to maintain a steady oil temperature of about 275°F. Stir the concentrate with a toothpick or bamboo skewer as bubbles form, keeping an eye out for the moment at which bubble formation slows. Remove the pan from the heat when bubble activity starts to slow down.

Add the sunflower lecithin to the warm cannabis concentrate in the glass dish. Mix thoroughly with the toothpick or bamboo skewer while the concentrate is still hot, as the heat helps the lecithin emulsify the extract.

 Pour the warm cannabis concentrate and lecithin mixture into a high-speed blender with the thawed juice concentrate. Blend until the mixture is evenly incorporated and no specks are visible (about two minutes on full blast—blend longer if necessary).

Chill the mixture in a refrigerator.

SERVING

Mix two tablespoons of the infused juice with one cup sparkling water, tonic or club soda per serving (adapt to suit taste and potency preferences). Garnish with fresh cannabis leaves or fruit and enjoy! This recipe makes 11 eight-ounce drinks.

POTENCY

If the starting concentrate is about 75 percent THC, each tablespoon of the infused-juice mixture will contain roughly 32 milligrams of THC. By mixing two tablespoons of the infused juice with the sparkling water/tonic/club soda, each serving will contain approximately 62 milligrams of THC.
